Last night I had an absolutely fantastic dinner!!!! It was so delicious and easy to make.
Lobster is usually a bit too much for my budget. Last week it was on sale at Sprouts!! This morning while I was trying to figure out what to make, I saw Annie’s Mac & Cheese in my pantry and Lobster Mac & Cheese popped into my head!!!! I got so excited, it was all I could think about all day!! After work, I quickly gathered my ingredients, which were very few!
With three servings, this meal clocks in at about 312 calories a serving!!!! To start I took the lobster tails, cleaned them and placed them in the steamer for about 8 minutes until they were a beautiful pink.
While they cooked I prepared the Mac & Cheese according to the box directions. I substituted the skim milk for almond milk and didn’t use butter. I then chopped the onion & zucchini and put it in a pan to cook for a few minutes with just some salt, cayenne pepper and olive oil.
Once the lobster was done cooking, I took the meat out of the shell (a very very messy process). I had to use scissors and a knife 😛 Once the meat was out I diced it and added it to the vegetables. I then combined the mac & cheese and cooked the whole thing for about two minutes to let the flavors really settle.
And there you have it! Lobster Mac & Cheese. So so so delicious I completely devoured my portion. My roommates seemed pretty pleased as well with my creation 🙂
Lobster Mac & Cheese
- Two Lobster Tails
- Boxed Mac & Cheese
- 1 Zucchini, chopped
- ½ Onion, chopped
- 3 tbsp Almond Milk
- Cayenne Pepper
- Cook the Shells according to the box directions
- Steam the lobster tails until pink.
- Sauté the zucchini & onions until lightly tender, about 4 minutes. Season with salt & cayenne pepper
- Remove the meat from the lobster and chop into bite size pieces
- Combine all ingredients and enjoy!!
